These brownies are just simply astonishing. I woke up in the middle of the night in a puddle of drool after dreaming that i was asleep on a bed of two bite brownies. I was deeply saddened to realize that i was just on my bed.. and that i had eaten all of these brownies already.
I found that these brownies were a little bit dry. They seemed to be more like chocolate cake rather than a brownie. Although they tasted great and a dot of whip cream or white icing would look awesome on the brownies!
Made a second batch following the recipe exactly as written and it was indeed like the store bought brownies but better! The tops formed a nice crisp shell and the inside was dense and moist. My husband and kids think they are the best brownies ever! Thanks for sharing the great recipe.
I freeze these two bite brownies all the time. I love having a snack like these on hand in the freezer for throwing into the kids lunch boxes during the school year. Or for pulling out for an after school snack.
Do you have to make the two bits brownies in a mini muffin tin ? Will they hold their shape on a cookie sheet or regular size muffin tins? I'm anxious to try them but have no use for the smaller muffin tins. Thanks
I'm not sure how they'd work as cookies, but I have made these in a regular size muffin tin (hot chocolate brownies) so that will work just fine. You still only need to bake them for about 10 minutes, same temperature.

Hi Susy! We're so happy the cookies were enjoyed. Letting the flaxseeds rest in water gives them time to absorb the water. This allows the mixture to thicken and gel, which is sometimes called a "flax egg", and helps with binding the brownies together. We hope this helps for now ?

Portion the batter into the mini muffin tin in a one-tablespoon measurement. DO NOT overfill the muffin hole. Bake for 20 minutes. Remove from oven. Allow the brownies to sit in the muffin tin for 5 minutes before removing them to finish cooling on a cooling rack.

They are way way better then I thought they would be, for those who asked about subing the coconut I made mine with out (my husband doesnt like coconut) and they were still amazing, I did the last batch with walnuts mixed in and honestly I prefer them with out but they are still good with the nuts just be sure to chop the nuts up really small if you use them or the brownies dont hold very well. They do however hold with extra chocolate chunks added (im just saying). Thank you for this fab recipe!
